Best way to modify surface snow?

I'd like to modify the surface snow partway through a run. I first tried to modify the snow depth variable in the WRF restart file. I set all grid points above 43N latitude to have 1 meter of snow. Upon restarting the model it seems nothing was affected by the change (albedo in the output file does not show that there is a meter of snow everywhere). Can anyone point me in the right direction for understanding how WRF calculates the effect of snow or albedo? One idea i had was that its possible that changes to restart files are ignored if the model physics aren't consistent. Full disclosure, I am quite new to modelling in general, any assistance is much appreciated.
