WRF output use ncdump ???

when i use ncdump to convert wrfout* data
why my setting vertical level is 31,so bottom_top_stag=31, bottom_top=30
why P,and PB is "30" level ????
WHy not like PH,and PHB is "31"level

The fields with 31 levels are staggered (i.e. on half levels). Please see the Users guide and WRF technical document for a description of the staggering (both horizontal and vertical).

You can get geopotential height on mass levels by doing an average (essentially linear interpolation).
